This From Scratch Spicy Kimchi Ramen recipe has become a staple in our house and is on a weekly rotation these days. It combines all my favorite things in a steaming bowl of ramen. -Spicy broth with fresh noodles, yummy toppings and protein. For a combination of flavors that hits every single time.

This recipe comes together super quickly. It uses ingredients that you can find at your local grocery store or asian market. I like to use a grilled chicken recipe for even more flavor but you can also top with pork, steak or protein of your choice.

Ingredients You’ll Need
–Fresh Noodles: You can use fresh egg noodles, or any fresh noodle from your local asain market. In a pinch ramen noodles from a pack will do but I always recommend fresh for better flavor!
–Chicken Broth: I like to buy the organic kind but you can use whatever you have on hand
-Fresh Veggies: Onions, garlic, shiitake mushrooms and minced jalapeno
–Gochujang: My favorite brand is from amazon, linked here
-Soy Sauce: Whatever you usually use is fine
-Sesame Oil: Usually in the international isle at your local grocery store.
-Seasonings: Garlic powder, paprika, salt, pepper, cayanne and red pepper flakes.
-Spicy Kimchi: I have been loving the Jongga Kimchi from Costco
-Toppings: My favorite toppings are Grilled Chicken, Spring onions, fresh kimchi, sliced seaweed, pickled onions and a soft boiled eggs.

To make your From Scratch Spicy Kimchi Ramen. Get a medium sized saucepan and heat up a tablespoon of oil on medium high heat. Add 1 cup of chopped shiitake mushrooms, 1/2 a large chopped yellow onion, cook for 5 minutes or until onion is translucent. Add 4 cloves of minced garlic and cook for 1-2 minutes till fragrant. Then add in 1 and 1/2 cups of kimchi and cook for 2 minutes on medium heat.
After the Kimchi has cooked for 2 minutes add in 1/2 cup of the liquid from the kimchi jar then add 2 T soy sauce, 2 tablespoons gochujang, 1 teaspoon sesame oil, 1 teaspoon garlic powder, 1/2 teaspoon salt, 1/2 teaspoon paprika, 1/2 teaspoon cayanne and a dash of fresh pepper. Cook for another minute to let the flavors activate.
Add in 2 cups of chicken stock or broth and bring to a boil. When it has just started boiling turn down the heat and let simmer for 15 minutes.
Meanwhile bring to a boil a large pot of water. salt the water and follow the directions on the package for your noodles.
To plate add noodles to the bottom of your bowl, add in some of the kimchi, veggies and broth from the pot. Top with your choice of toppings.
Serve right away for best results!

The Most Delicious Made From Scratch Spicy Kimchi Ramen

Method
- Chop up your veggies, put a large pot of water on the stove to heat up while you prep the broth.
- In a medium saucepan ( make sure you use a pan big enough to hold 3 cups of liquid) heat 2 Tablespoons oil, add the onions and shiitake mushrooms and cook for a few minutes until onion is translucent. Add in the minced garlic and cook for another minute or two until fragrant.
- Add the kimchi to the pan and cook for 4-5 minutes. Then add the sauces to the pot, the kimchi liquid from the bottom of the kimchi container, then add the seasonings. Cook for 2 minutes stirring occasionally. Add 2 cups of broth and bring to a boil.
- Let the broth boil for about a minute and then lower the heat. Continue to simmer the broth for 15 minutes.
- Cook Noodles per instructions on noodle package and then rinse. I usually put a little oil on them and shake around so they don't stick to each other.
- Add a serving of noodles to the bottom of a bowl and then add some of the veggies, kimchi and broth from the pan. Top with your desired toppings and serve right away for best results.
This recipe creates an Absolutely Delicious meal!
