Ingredients

  • 1 Package Noodles preferably fresh
  • 2 Cups Chicken Broth
  • 2 Tbsp Olive Oil
  • 1/2 Cup Yellow Onion Chopped
  • 4 Cloves Fresh Garlic Diced
  • 1 Cup Shiitake Mushrooms Chopped
  • 1 1/2 Cups Kimchi
Seasonings
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp cayanne
  • 1/2 Tbsp red pepper flakes
Sauces
  • 2 Tbsp Soy Sauce
  • 2 Tbsp Gochujang
  • 1/2 tsp sesame oil
  • 1/2 Cup Kimchi Liquid
Toppings
  • 2 whole Spring onions
  • 1/2 package Seaweed Snacks chopped up
  • 2 whole soft boiled eggs
  • 2 Tbsp Pickled Onions
  • 1 piece Grilled Chicken Sliced

Method

  1. Chop up your veggies, put a large pot of water on the stove to heat up while you prep the broth.
  2. In a medium saucepan ( make sure you use a pan big enough to hold 3 cups of liquid) heat 2 Tablespoons oil, add the onions and shiitake mushrooms and cook for a few minutes until onion is translucent. Add in the minced garlic and cook for another minute or two until fragrant.
  3. Add the kimchi to the pan and cook for 4-5 minutes. Then add the sauces to the pot, the kimchi liquid from the bottom of the kimchi container, then add the seasonings. Cook for 2 minutes stirring occasionally. Add 2 cups of broth and bring to a boil.
  4. Let the broth boil for about a minute and then lower the heat. Continue to simmer the broth for 15 minutes.
  5. Cook Noodles per instructions on noodle package and then rinse. I usually put a little oil on them and shake around so they don't stick to each other.
  6. Add a serving of noodles to the bottom of a bowl and then add some of the veggies, kimchi and broth from the pan. Top with your desired toppings and serve right away for best results.

Notes
