Try These Spicy Cheesy Egg Bites for a delicious, filling breakfast! I love these because you can customize them to use up whatever veggies and protein you have on hand. Plus they store in the fridge super well without loosing their texture or flavor.
Whenever I eat a high protein breakfast I feel like it sets the tune for how the rest of my day will go. These Cheesy Egg bites are great because they pack a lot of protein in a small amount of food, plus they are super flavorful and easy to eat on the go, which is great if your like me and hit the ground running in the mornings.
I hate when I have to spend tons of time trying to figure out what to eat for breakfast and these Spicy Cheesy Egg Bites have been a fantastic option for me to have on hand for busy days!
Made with simple ingredients, they come together super quick! I store in a zip-lock baggie in my fridge and reheat in the oven at 350 for 5-10 minutes for best texture and flavor. Can also be reheated in microwave or toaster.
I’ve found adding jalapenos and hot sauce adds just the right amount of kick for me. You can leave these out if you prefer not to eat spice. I also like to use a sharp cheddar cheese for the tangy flavor it adds. You can substitute for your favorite cheese if you prefer something else.
Ingredients I use
Eggs: I like to use Pasture raised.
Greek Yogurt: I use a high protein yogurt I found at Costco, you can use whatever you have on hand.
Salt + Pepper: I prefer to use a pink salt
Butter: I like to use kerrygold butter I get in bulk at Costco
Red Pepper: Finely Chopped
Tomatoes: Finely Chopped, I use cherry tomatoes but you can use whatever you have on hand.
Yellow Onion: Finely Chopped
Sausage: I like to use the Organic Chicken sausage from Trader Jo’s, you can substitute for your favorite sausage.
Jalapeno: Minced.
Cheese: I like to use an extra sharp Cheddar Cheese.
Seasonings: You’ll need Paprika and garlic powder.
How to Make Spicy Cheesy Egg Bites
Preheat oven to 325 degrees Fahrenheit.
Melt butter In a medium saucepan over medium high heat. Add chopped red pepper, onion, tomatoes and minced Jalapenos. Cook for one minute and add chopped Sausage. Cook until sausage is cooked and veggies are soft.
Meanwhile in a large bowl beat the eggs. Add the salt, pepper, paprika and garlic powder and stir again. You want to make sure the eggs are totally mixed and smooth. Add the Greek yogurt and mix again.

Add the veggies and sausage mixture to the egg mixture and mix together. Last add 3/4 the cheese, save the rest for topping.
Grease a muffin pan or add liners and fill till 3/4 full, sprinkle the remaining cheese on top of each one. Bake for 20-25 minutes or until the egg bites are set.

To store in fridge let cool completely. Place into a zip-lock bag. They will keep in the fridge for 3-5 days.

Pairing Suggestions
Serve with avocado, cilantro, salsa or hot sauce. My husband likes to add a little mayo to the top as well.
These are also great with a side of toast or in a breakfast wrap.
