Quick zesty and so satisfyingly crunchy!
This super quick Zesty Pickled Cucumber is an asain flavored refrigerator pickle recipe that comes together in less then five minutes and is the perfect healthy snack to satisfy your craving for a tasty treat!
No mixing required- Just toss the ingredients in the jar and shake till well combined, let sit in the refrigerator for up to a month.

Why do you need to try pickled cucumbers?
Zesty Pickled Cucumbers are my weekly go to for a quick tasy snack. My husband eats these straight out of the jar and they rarely last longer then a day or two, the flavor does inhance the longer these sit in the fridge – however they taste amazing as soon as 30 minutes after mixing them.
These are delicous as a salad topper, spicy snack or addition to your meal. The brine can be reused, just throw in more cucumbers as needed.
Ingredients needed:
Cucumbers: My favorite is english cucumbers but you can use whatever cucumber you prefer
Apple Cider Vinegar: I use the Braggs brand
Sesame Oil: Pick up from your local grocery store or asian market
Soy Sauce: I use the Kikkoman brand from my local sprouts
Gochujang: Typically in the same area of the store as Soy Sauce
Honey: Organic Wildflower honey is my favorite
Paprika: Whatever you have in your cabinet, smoked paprika is my favorite!
Optional add ins: Spring Onions, Garlic, Pepper flakes, garlic powder, jalapeno peppers sliced thin
How To Prep the Ingredients
Chop up your cucumber into small slivers. You can also hassle the cucumbers but we prefer them sliced so I’ll be sharing this version.

Step Two: Add your cucumbers to a jar and top with sliced green onions and red pepper flakes if using

Step Three: You can either directly add the ingredients ontop of the sliced cucumbers or mix the guchugang paste, soy sauce, sesame oil and seasonings in a container and stir together before pouring ontop of the cucumbers

Step Four: Add Apple cider vinegar till your jar is half full. Does not need to be a precise measurement. Fill to the top with water.
Step Five: Cap the jar and shake to combine ingredients fully.

Method
- Cut cucumber into small slices and add to jar or container of choice
- Add the gochujang paste, sesame oil, soy sauce, and seasonings to a seperate dish to mix if you wish or just pour each ingredient directly on top of the cucumbers.
- Add the apple cider vinegar and water. place cap ontop of the jar and shake until all ingredients Wait atleast 15-30 min before eating! The flavor is best after 24 hours
